Edamame Pasta Dish

I’ve recently become so obsessed with using pasta alternatives such as edamame or black bean spaghetti! I prefer it to whole wheat spaghetti, as it actually offers nutritional benefits such as 22g of protein per 50g (amazing!) plus it’s also lower in carbohydrates, with only 16g per 100g.  Also, it is gluten-free, vegan, and a great source of fiber! Basically, I have come to love the stuff and so I really wanted to share a yummy recipe with you all so you could give it a go too!

This dish is one of my absolute favourites to make because it is quick, simple, and budget-friendly. You can find the pasta alternative in most supermarkets such as Aldi and Tesco, if not you can buy it online from Holland & Barrett.

Ingredients:

  • Edamame or black bean spaghetti
  • Tinned mackerel in tomato sauce
  • Sundried tomatoes
  • Fresh tomatoes
  • Red or white onions (diced)
  • Garlic
  • paprika
  • Salt
  • Black pepper
  • Cayenne pepper
  • Basil (fresh)
  • Olives
  • Spinach

Method:

  1. In a frying pan sauté the onions for a few minutes, then add the fresh tomatoes and fry for a further two minutes
  2. Meanwhile, bring a pan of water to the boil and add the spaghetti (this cooks very quickly, and so it should only take between 5-8 minutes
  3. Once the pasta is cooked, drain it and add it to to the frying pan
  4. turn the heat down to a lower setting, and add all other remaining ingredients and spices
  5. Serve and enjoy!

(I also added mushrooms and mangetout to my dish!)

Macros:

  • 319 calories (per serving, sharing the mackerel between two dishes)
  • 14.9g carbs
  • 10.2g Fat
  • 31.9g protein

 

You can also add any other veggies to this dish such as broccoli or top the dish with avocado, which also works really well. I hope you enjoy this healthy pasta dish,

Foodie Finds – March 2018

Here are my foodie finds for the month of March. For me, March signifies the start of spring and better weather (not to mention the chocci easter eggs which I hope you’re all enjoying this weekend).

1) White chocolate whey ballsFullSizeRender

These are from Bulkpowders and are amazing! The best way to describe them would be like Maltesers, but with more crunch. I love how versatile they are, and they make the perfect sweet treat and taste great when added to porridge. They cost £10.99, but you do get 500g for this price, and they are so worth it!

download2) Fellow Sugar-free cola bottles

I always see these sweets flying around Instagram, and had to give them a try. Considering they are sugar-free, gelatine free, and gluten free they taste pretty good! The only difference I found is that they were chewier than standard cola bottles, which is good considering they are free-from just about everything! You can pick them up from Sainsbury’s and Holland & Barrett.

3) Belvita Soft BakesIMG_1914

Although definitely not the healthiest thing, I have always wanted to try these and I can’t deny that they taste amazing! It’s like a cross between a flapjack and a cake with a chocolate filling, and you certainly can’t go wrong with that.

I picked this pack up from Sainsbury’s and was pleasantly surprised. The texture was a lot crunchier than what I thought it would be, and the BBQ flavour was so intense. Also, the company uses all-natural ingredients and the flavour comes from the spices that they use, so worth a try.

5) Halo Top Peanut Butter cup Ice creamIMG_3372[1]

SO worth the hype. I don’t know how they do it, but it tastes incredible! If you love your ice cream, I highly recommend this…plus at only 320 calories per tub, it’s guilt-free. I also saw they had other flavours like cookie dough, mint chocolate chip, and classic vanilla. You need to try this!

Foodie Finds – December 2017

I hope you all had a lovely Christmas and new year! To me, every Christmas has a different feel to it, this year it most certainly was a busy one spent with lots of family and friends…So busy in fact, I’m a bit late on posting this blog. Nonetheless, it’s here and packed full of goodies that I hope you want to give a go…

1) PHD nutrition protein bar 26829505_1777633395644245_1948590545_o

I’ve always wanted to try these bars, and I’m very glad I did. I tried the cookies and cream flavour which was so good. The macros are very good with 20g of protein per bar, and also it is low in impact carbs. For me, nothing can beat Grenade, although these are still well worth a try.

Probably the best ‘healthy’ crisps I’ve tried. I found these in my local Sainsbury’s, they also have a good range of flavours to choose from, this pack is caramelised onion and balsamic vinegar. I love that they’re made out of something different other than potato, and plus the packaging is so cute!

Personally, I wouldn’t describe this as a protein bar, it’s more like a natural fruit bar as its made mostly out of dates. Each bar contains 10.5 g of protein, which is fairly low compared to some of the others. But… If you like mince pies, then you can’t fault the flavour of this bar!

One of THE best flavour of protein powder that I have tried. Bulk powders definitely need to make this a permanent one in their collection, as it tastes amazing. Unlike others flavours, this one really did taste like what it says on the packaging, it’s just a shame that it’s limited edition, otherwise I would definitely be placing another order!

You know you’ve made a good milkshake when you just can’t put it down, this new product from sweet freedom is a milkshake game-changer. I love that it’s so quick and simple to make, and literally only requires you to mix a tablespoon of the chocolate into some milk. Also, it tastes even better when you forth the milk! I’ve noticed they do a banana flavour, which I will be giving a go.

Becuase what would Christmas foodie finds be without a bit of chocci involved?! Seriously this stuff is amazing, the dark chocolate and salted caramel go so well together…I think I’m addicted!

I picked these up from Tesco recently, and they’re fab. They only take 6 minutes to cook (either stir-fry or boil) and when flavoured well, they make the perfect addition to a stir-fry. Noodles are so great to incorporate into your diet as they are high in protein, and vegan-friendly, what with ‘veganuary’ now in full swing!

Buddha Bowl

Although very appetizing, Buddha bowls can be super expensive. So I’ve created this budget-friendly bowl so you can Buddha until your heart’s content 😉

Turmeric Bulgar wheat with raw tomatoes and cucumber, stir-fried peppers, broccoli, courgette, onions, Quorn chicken, and a side of spinach, topped with avocado, feta, and chili flakes.

Buddha bowls are all about the combination of lots of wholesome ingredients, giving you a dish with texture, colour, and flavour – and that’s what I love most about them. The main ingredients that constitute a buddha bowl include some form of protein, grains, and vegetables, but my advice is to tailor it to what you like, as you’ll enjoy it far more! It’s actually impossible to get bored of a Buddha bowl with the limitless number of flavour combos. Below are a few of my favourite bowls.

When I make these bowls, it’s always a question of how much I can actually pack in the bowl! They are a fab way to get in most of your 5-a-day and much-needed micronutrients…in fact, the whole bowl literally represents the ‘Eatwell plate’…#winning 😉

IngredientsBuddha

Grains:

  • Soya mince, brown rice, bulgur wheat, quinoa, couscous, buckwheat or barley.
  • You could also make cauliflower/broccoli rice if you wanted a lower carb option.

Protein:

  • Lentils, egg, Quorn chicken, beans (kidney beans, black beans, butter beans etc), tofu, or seafood.

Vegetables:

  • Sweet potato, cucumber, tomatoes, spinach, courgette, broccoli, cauliflower, carrots, red onion, mushrooms, beetroot, aubergine, and sprouts…if you’re feeling festive ;).
  • Usually, some of the vegetables will be left raw such as tomatoes, cucumber, and carrots, to add to the texture.
  • Also, you could make your own veg slaw.
  • To add some sweetness to your bowl, things such as blueberries, mango, apples, and strawberries are a great choice.

Extras:IMG_3902

  • Toppings: sesame seeds, cashew nuts, feta, pumpkin seeds, croutons, parmesan flakes, olives, avocado slices, chia seeds, chives, spring onions.
  • Spices/ herbs: chili flakes, black pepper, cayenne pepper, garlic, parsley.
  • Sauces: houmous, BBQ sauce, tahini, light mayonnaise, light salad cream, light soy sauce, balsamic vinegar, sweet chili, sriracha – and there are so much more. But it also tasted just as good without the addition of these, as you can taste the flavors more.

Pretty Little Picnic

There is something so lovely about having a picnic: The sun shining down, all the food, spending time with friends. I think we could all do with giving ourselves more time to escape to the country for an hour or two, and what better reason than to have a picnic?

IMG_7205In my eyes picnics are so underrated, although admittedly dependent on the weather, they’re so simple to organise that you could easily arrange one of an afternoon. As a student, I’m always thinking of things to do which are affordable, and this most definitely is! Everyone can provide some food, and before you know it you’ve got a tasty feast.

When organising a picnic, I prefer to have it somewhere quieter that also allows you to go for a leisurely stroll afterward, so a nice location is key. But I also have invited friends round to have one in my garden, they can be as simple as you make them.IMG_7165

A friend and I set up our picnic blanket in the afternoon sunshine in a quiet field (would recommend not having it on someones private land, which we unknowingly did…oops!) and had a lovely catch up and giggle, whilst of course munching on all the lovely food.

As you can see, our picnic for two was virtually effortless and was done only using foods that we had available. We had fruit kebabs, my homemade caramel brownie protein balls , Go Ahead chocolate crunchy dippers (which tasted amazing), and some refreshing summer fruits squash.

Once we had eaten as much as we could, we then went for a walk along the Wey & Arun canal in West Sussex, which was absolutely beautiful.

I felt so peaceful after doing so, and I hope I’ve inspired you to get outside and see the beauty that is all around us,

Strange Snacks

I am such a snacker. Snacks are what keep me going throughout the day, as I prefer to eat smaller meals, and then have a couple of healthy snacks in between. Often, I’ll just stick to my Staple Snacks, but as with everything you’ve got to mix things up to keep them interesting. So here are a few of what I like to call ‘strange’ snacks, as they aren’t you’re typical piece of fruit 😉

Seaweed Thins

These make the perfect snack for when you’re a little bit peckish, they’re very light and I just find the concept of eating seaweed so novel. Also, in my opinion, they look so much better than your bog-standard crisp…they’re Green! Normally, they come flavoured with sea salt, but I have tried some green tea infused thins before which were just as lovely.

Something a little sweet! When I saw these I just had to give them a go, especially as most snacks with breadsticks are savoury, and as I have a massive sweet tooth…they had me at hello ;). They are so worth the 148 calories, the perfect pick-me-up. Don’t fear if chocolate isn’t your thing, as they also have salted caramel and coconut and vanilla dippers…yum!

Protein Bars

Yes…that is a Mars protein bar you see, and it is the bomb!

My new obsession. If I have had a really good gym session or I fancy some chocolate (always ;)), then I will reward myself with one of these bars of heaven. My favourite brands are Grenade, Quest, Mars, and Fulfil, as I find these all have the lowest sugar content and the highest protein. They can be quite expensive at £2.50 a bar, but it’s SO worth it. Also, if you haven’t tried heating one up the microwave you definitely should, it turn into a gooey chocolate pudding.

These really are sensational, the flavour combinations work wonderfully together. Also, they’re only 63 calories and I’ve never seen a packet of crisps that low. If anything I would try them for the flavours, they’re unlike anything I’ve tasted.

Vegan Lemon & Chia Seed Pancakes

I love having pancakes for breakfast so much, that I’ve created a vegan version of my Protein Pancakes. I’ve not yet met a person that doesn’t love pancakes for brekkie, so thought I’d share the pancake love with you all, vegan style.

 

 

Although not a vegan myself, I have nothing but admiration for those who are! Having tried a lot of vegan pancakes recipes they tend to use fancy and expensive ingredients, which is great if you’re planning to have pancakes some other day and are willing to buy the ingredients, but if you’re like me…I want them when I crave them ;). Therefore, this recipe uses very basic ingredients which you’ll probably have lying around in your kitchen anyway.

These lemon pancakes, are exactly like the classic pancake day combo of lemon and sugar, except a lot healthier and you can eat them for breakfast.

Ingredients

Serves 1, making 6 – 8 small pancakes.

  • 45g of oats (blitzed into a powder)
  • 1/2 a ripe banana, chopped
  • 1 tsp of baking powder
  • 2 tbsp of lemon juice, plus extra for flavouring
  • Agave nectar syrup
  • 75-80ml Unsweetened Almond Milk
  • 2 tbsp of Alpro Go On yoghurt
  • 1tbsp of chia/poppy seeds

Method

  1. Blitz the oats into a powder
  2. Add all the other ingredients into the blender (adding the milk bit by bit)
  3. Pour the batter into a preheated pan with some coconut oil, as these take longer to cook than my other pancakes
  4. Stack them up, top with more Alpro yogurt, lemon juice, and drizzle agave nectar all over.

TIPS:

  • It really helps to have a good non-stick pan when making pancakes.
  • Always preheat your pan on a low heat whilst blending all the ingredients.
  • Add some coconut oil to the pan after each mini batch of pancakes.
  • Only flip the pancakes when lots of bubbles appear on the surface, and you should get perfect vegan pancakes…can you tell I’ve made these a lot?!

  • 14.5g protein

Caramel Brownie Protein Balls

Protein balls have become a big thing, and after making these, I can see just why. Think gooey brownie bites with a hint of caramel and that’s what these beauties taste like. IMG_7267[1]

I find the snack so convenient to make ahead, especially as they last for up to 4 days in an airtight container, so you know exactly what to have next time the chocci cravings call.

I’ve experimented a lot with this recipe, but this was definitely my favourite batch as the texture is like cookie dough, making them so moreish. Also, they’re great when rolled in coconut, as all the flavours work brilliantly together. If you prefer protein balls less gooey, then you could always increase the oats and water.

This recipe uses cacao powder instead of cocoa powder, as it’s less refined meaning you’ll also be getting a good dose of magnesium and antioxidants…a winner all round!

Ingredients:

This recipe makes 8 balls,

  • 15g of oats
  • 10 pitted dates
  • 40ml water
  • 2 tbsp of desiccated coconut
  • 2 heaped tbsp of cacao powder
  • 1 scoop of chocolate caramel protein powder

Method:

  1. Add all the dry ingredients into a food processor whilst slowly adding in the water
  2. When the mixture clumps together, then you can start rolling into 8 even balls
  3. Roll the balls in some desiccated coconut or flaked almonds, if you like.

  • 88 calories
  • 11.6g carbs
  • 4.8g protein
  • 2.6g fat

Protein Smoothie Bowl

Smoothie bowls are one of my go-to breakfasts, they’re a great way to pack in your micro nutrients, and whats more they’re surprisingly filling.

I like my smoothie bowls like a mousse, there is nothing worse than a ‘sinking’ smoothie bowl where all your toppings just sink to the bottom…certainly not instaworthy ;).

However, there is a knack to making these bowls, I only use the same amount of fruit as I would eat in one sitting otherwise, what with all the toppings, they can end up a fruity calorie bomb. I would also recommend buying a protein powder that will compliment any fruit combination such as vanilla or berries and cream.

The following recipe makes one smoothie bowl.

Ingredients:

  • 2 handfuls of fruit (frozen fruit makes it more creamy)
  • 80-140ml of your choice of milk
  • 2 tbsp of natural yogurt
  • 1 scoop of protein powder (I used berries & cream)
  • Your choice of toppings

Method:

  1. Place the fruit, yogurt, and milk in a blender
  2. Once blended, then add the protein powder and blend for a further 30 seconds
  3. Serve and add your choice of toppings.

  • 200 calories
  • 3g fat
  • 15.8g carbs
  • 26g protein
